This 65% cocoa infused chocolate is made with the best mandarin lemon from Viotá - Cundinamarca, it is one of our new chocolates where creativity and the balance of textures and flavors are reflected.
To make this bar, we transform fine aroma cocoa beans from Meta, Colombia, infusing them at controlled temperatures with the shells of the fruit until reaching the cocoa liquor.
We then add cocoa butter and premium cane sugar and shell this mixture for approximately 7 hours, thereby volatilizing the residual astringent and acidic flavors in the infused chocolate.
Apart we create crunchiness with the peels of this mandarin lemon which we put inside the chocolate bar when molding.
